Take a representative slice of the contract set, including the badly scanned ones. Agree the fields that matter with the partner who will sign the output.

A baseline measurement both sides agree on.
Have the team abstract a subset by hand. That is both the quality bar and the comparison — without it, there is nothing to prove later.

Design
A design your architecture and risk leads have approved.
Design extraction per field with confidence thresholds, and decide which fields always get human confirmation regardless of confidence.
STAGE 4
Ship
Working software or a live process, in production.
Run the set with every value linked to the clause it came from, so review is verification rather than re-reading.
STAGE 5
Prove
A result measured against the baseline, and an instrument you keep.
Report accuracy per field against the hand-abstracted subset, plus review time. Fields that do not clear the bar stay manual.
